Mediterranean breakfast

Sometimes I feel like switching up my usual breakfast and reach for fresh vegetables, olive oil and lots of parsley. The Mediterranean cuisine is known for its association with health and this is a really fresh way to start the day.

Did you for instance know, that only 20 g of fresh parsley provides you with 364 % of daily recommended intake of Vitamin K, 35% of Vitamin C, and 12 % Vitamin A? It’s pretty amazing.

Today, I will show you a combination of fresh fruit, vegetables sauteed in olive oil, served with fried halloumi and a smoothie bowl.

If you want to keep the breakfast vegan & paleo, I recommend to exchange the halloumi for mixed natural nuts.

Main ingredients
– 1 aubergine/eggplant
– 4 green narrow bell peppers, “sivri”
– 2 slices of halloumi burger or 4 slices of regular halloumi
– Olive oil
– Salt
– Fresh parsley
– Hummus
– Baba ganoush
– Watermelon

Serve with
– Smoothie bowl, for instance
Expanded açai bowl
– Green tea

1. Heat up a pan with olive oil
2. Slice up the eggplant and sprinkle salt over the slices
3. Fry the eggplant slices and green peppers until soft
4. Fry the halloumi
5. Make the smoothie bowl as per Expanded açai bowl
6. Plate up with fried vegetables and halloumi + hummus and baba ganoushe
7. Slice up watermelon on put on the side
8. Assemble all dishes, serve with green tea and enjoy!
