March 25 is known as the International Waffle Day, so why not celebrate with some lovely treats?

I don’t make waffles that often, but since it is such a special day, I decided to dust off my old waffle iron and use the batter from my favorite pancake recipe: The best gluten-free paleo pancakes.
I just added some extra fat to the batter, and then made a homemade “nutella” sauce, with whole foods ingredients, as a side. It worked out beautifully.
Vegan option
Just as with the pancakes, you can replace the egg with a vegan “chia egg”. This means that you mix 1 tablespoon of chia seeds with 3 tablespoons of water and let the mix sit for 5 minutes. I prefer to grind the chia seeds before mixing with water for a more smooth texture.

Main ingredients
– 120 ml almond flour or ground almonds
– 120 ml tapioca starch
– 240 ml plant-based milk. For paleo, use almond milk. Else, try e.g. oat milk or soy milk.
– 1 organic egg or 1 chia egg (1 tbsp chia seeds mixed with 3 tbsp water)
– 1 pinch of salt (1 ml)
– 25 g vegan butter or coconut oil (optional)

For frying:
– Vegan butter or vegetable oil.

“Nutella” / Hazelnut sauce:
– 1 tbsp hazelnut butter
– 3 fresh dates, pitted
– ~2 tsp cocoa powder
– A splash of plant-based milk, e.g. almond
– A dash of salt

Fruit and berries to serve with
– Banana
– Strawberries

1. Start heating your waffle iron.
2. Melt the vegan butter/coconut oil. I do it in a cup in the microwave.
3. Mix the nutella sauce ingredients in a food processor or blender.
4. Brush some of the melted butter/oil on the waffle iron
4. Mix all the ingredients of the batter
6. Pour 1/3 of the batter into the waffle iron and bake until done.
7. While the first waffle is baking, slice up the banana and strawberries
8. Assemble the waffle, fruit and berries and nutella sauce and serve
9. Keep baking the other waffles and serve as soon as they leave the waffle iron.

Variation tips: Can be made vegan by exchanging the egg for a chia egg.
Serving tips: Serve with the home-made nutella sauce, fresh fruit and berries. You can also try grated coconut, coconut cream and lemon balm (herb) 🙂
